If there are plenty of tables available and no waiting… Why make reservations at Flight or any restaurant?
If you’ve ever been in a less than crowded restaurant and received slow service or if your favorite dish or the special is sold out frequently, it is most likely due to the chef and general manager having no idea how many guests to prepare for.
On any given night, the general manager checks reservations and adds a few walk-ins to the number and decides to release a server or two. The chef releases two kitchen staff. Invariably, half an hour later three groups of six walk in. Now the restaurant is short handed.
The moral of this story: Make reservations if possible. You’ll get better service and enjoy your visit more!
