Vegetarians and vegans — Can they dine at Flight?

Here are the facts, Ma’m. A huge percentage of Flight’s sales are red meat, red wine and chocolate. Chicken languishes. Pasta limps. Fish, however, especially the seared tuna for which Flight is noted, soars. Just not to the height of red meat.

Chef Rich Irish tried a tasty dish of sorbu noodles and tofu. In three weeks, there were only 3 orders! Yet, we at Flight know we have vegetarian and vegan patrons. What do you think? Are there elegant and tasty dishes that suit a vegan?
